INGREDIENTS

1 lb Peaches, cut in half, pits removed
3 cup Buttermilk
1 cup Creme fraiche
½ cup Dill
½ cup Mint
½ cup Basil
½ cup Cava Rose Vinegar
¼ cup Olive Oil
½ cup Marcona Almonds, toasted and crushed
1 tbsp Basil Oil (or other herb oil)
1 tsp Salt and Pepper

Buttermilk Peach Summer Soup

A refreshing and creamy soup, made with grilled peaches and buttermilk. Perfect on a hot, summer day!

COOKING INSTRUCTIONS:

  • Season the peaches with a pinch of salt and canola oil
  • Grill on medium high heat until tender
  • Blend ½ of the peaches together with buttermilk, creme fraiche, herbs, vinegar, and olive oil
  • Taste and adjust seasoning with salt and cava rose vinegar
  • Cut remaining peaches into bite size pieces and season with olive oil

  • To serve:
  • Ladle cold soup into a bowl and garnish with grilled peaches, dill, basil, mint, & basil oil
  • Sprinkle with marcona almonds
