INGREDIENTS

1 habanero, red
4 cups seedless watermelon chunks
1 large garlic clove
2 lbs. Roma tomatoes
2 tablespoons red wine vinegar
4 english cucumbers, peeled
4 tablespoons yogurt
2 sprigs of mint, picked and torn.

Spicy Watermelon Gazpacho

Spice up your life with this fruity play on a Spanish classic.

Method

First Purée

  • Roast habanero until charred and cover.
  • When cool, peel, stem, and remove seeds.
  • Blend pepper with watermelon and garlic.

Second Purée

  • Blend tomatoes and cucumbers, season with salt and pepper.
  • Combine both purées and add vinegar

Serve!

  • Pour into 4 bowls and garnish with a tablespoon of yogurt and torn mint.
