RECIPE OF THE MONTH
Serves 4 people
as an appetizer
INGREDIENTS
1 habanero, red
4 cups seedless watermelon chunks
1 large garlic clove
2 lbs. Roma tomatoes
2 tablespoons red wine vinegar
4 english cucumbers, peeled
4 tablespoons yogurt
2 sprigs of mint, picked and torn.

Spice up your life with this fruity play on a Spanish classic.

Method
1
First Purée
Roast habanero until charred and cover.
When cool, peel, stem, and remove seeds.
Blend pepper with watermelon and garlic.

Second Purée
Blend tomatoes and cucumbers, season with salt and pepper.
Combine both purées and add vinegar

Serve!
Pour into 4 bowls and garnish with a tablespoon of yogurt and torn mint.
