INGREDIENTS

Brussels Sprouts 1 lb, trimmed & split
Rainbow Carrots 1 lb, peeled
Cara Cara Oranges 3 each
Almonds, 1 cup, toasted & chopped
Avocado, 2 each, diced into ½ inch cubes
Orange Tahini Dressing, 1 cup
Orange Zest, 4 tsp
Salt, to taste
Pepper, to taste

Orange Tahini Dressing

Orange Juice, 6 tbsp
Tahini, ¼ cup
Apple Cider Vinegar, ¼ cup
Apple Syrup 3 tbsp
Olive Oil, 2 tblsp
Orange Zest, 4 tsp
Salt, to taste
Pepper, to taste

Brussel Sprouts & Carrot Salad

When the salad outshines the bowl… Something healthy for you to kick around in your kitchen. Our Brussels Sprouts & Carrot Salad is comprised of cara cara oranges, avocado, toasted almonds and orange tahini dressing.

COOKING INSTRUCTIONS:

Preparing Brussels Sprouts

  • Bring 8 cups of water to a boil in a medium sized pan
  • Add Brussels Sprouts in 2 bathes, cooling each for 3 minutes
  • Shock in an ice bath. Drain well
  • Reserve in the fridge
  • Keep water at a boil for the next step

Preparing Rainbow Carrots

  • Cut cleaned carrots into 1 inch pieces
  • Cook in boiling water for 3-5 minutes, until easily pierced with a knife
  • Shock in an ice bath
  • Reserve in fridge

Preparing Cara Cara Oranges

  • Wash oranges thoroughly. Trim both stem and bottom end to expose segments
  • With a sharp knife, trim off the skim and pith
  • Cut orange into ¼ inch rings & remove seeds as needed
  • Reserve in fridge

Make the Orange Tahini Dressing

  • Orange Tahini Dressing
  • Combine all ingredients except olive oil in a bowl
  • While whisking vigorously stream in olive oil a few drops at a time
  • Season to taste with salt and pepper

Assemble the Salad

  • Combine brussels sprouts, carrots, cava cava oranges, and avocado in a large bowl
  • Add half of the dressing and gently toss to coat
  • Taste the salad and add more dressing as necessary
  • Season to taste with salt and pepper
  • Place on a platter of your choosing. Sprinkle almonds over the top
