Yields 10-12 2 oz. biscuits

Serves 5-6
as a side dish

INGREDIENTS

2 C AP Flour
1 T Baking Powder
2 t Sugar
1/2 t Cream of Tartar
1/4 t Salt
1/2 C Butter, melted
1 C Milk

Peach Quick Jam

1 lb. Peaches, skin on, cut into wedges and pit removed
3/4 C Sugar
1 T Lemon Zest
1 T Lemon Juice
1 t Grated Ginger
Splash of Bourbon
Salt

DROP BISCUITS and QUICK JAM

Nothing says 'I love you' like a warm batch of freshly baked biscuits - delivered as part of breakfast in bed for your sweetheart this Valentine's Day. Make your peach bourbon jam ahead of time and this recipe will score you points. And we mean points.

Making the Quick Jam

  • Place peach wedges in a saucepan, and add sugar, lemon juice, lemon zest, grated ginger and a sprinkle of salt. Bring to a boil, stirring frequently.
  • Boil and stir until the jam sticks to a spoon when lifted, anywhere from 12-28 minutes.
  • Remove from heat, stir in a splash of your favorite bourbon and let cool.
  • Refrigerate until completely cooled and for up to two months!

Combining Ingredients for the Biscuit Dough

  • Combine all dry ingredients in a large bowl and then form a well in the middle.
  • Pour milk and then melted butter into the center of the well.
  • Stir gently with a wooden spoon or your clean hands, working from the middle outwards.
  • Don't overmix the dough! Do this until just combined.

Baking the Drop Biscuits

  • Preheat your oven to 350'F.
  • Scoop dough onto parchment-lined baking sheets and place into oven.
  • Bake biscuits until they are a light golden brown, approximately 10 minutes.
